Felix' Master Recipe – the AeroPress brew recipe
We love the AeroPress, and Felix especially does. In 2015, Felix was the Swiss AeroPress Champion and represented Switzerland at the World Championship in Dublin; he is sharing his recipe:
1. Ingredients:
- 25 g coffee - relatively coarse grind (see example in the video below)
- 100 ml water (97 °C)
2. Preparation:
- Pour in water over 20 seconds.
- Stir the water evenly for 20 seconds.
- Screw on the filter cap and press out the air (should be done in 20 seconds).
- Flip the AeroPress after a total of 60 seconds.
- Press for 30 seconds until 1:30 min.
- Then add 100 g of water (bypass).
This AeroPress recipe using the bypass method has brewed many great cups. Felix Hohlmann became the Swiss AeroPress Champion in 2016 with it. The recipe was also successfully used with slight modifications at the German AeroPress Championship. Swiss filter coffee champion Emi Fukahori, who later became World Champion, also used the bypass method in 2018 during the compulsory service of the Brewers Cup.
What is the bypass method?
The bypass method is particularly suitable if coffee tends to become too bitter with "normal" brewing methods. When working with bypass, you don't force all the water through the coffee, which means less is extracted. Instead, you add a portion of the water to the concentrate after brewing.
