Why Does Apas Taste the Way It Does?
The APAS blend is a blend of coffees from different, organic-certified members of the APAS cooperative. 71 members have come together to market their coffee together under the APAS brand. They were Fairtrade pioneers in Brazil - and today they are among the very few cooperatives in Brazil that produce organic coffee. In the São Gonçalo do Sapucaí region, they operate their farms. Again and again, they have also been successful as individual producers in coffee competitions such as the Cup of Excellence. The coffee cherries for the organic APAS blend are individually dried in the cherry by the members on their own farms and then mechanically depulped. This dry processing emphasizes the nutty and chocolatey character of the coffee.
Tell Me More About Apas Espresso
It all started in 2017. In our barista training sessions, we needed a coffee that would meet home baristas where they were at. It needed to be a solid coffee with a familiar flavor profile, easy to dial in, forgiving, and yet distinctly different from a mass-market product. Through algrano, we came into contact with Apas. After importing the first pallet in 2017, interest in this coffee grew, along with the volume. Since Apas also started making appearances on our YouTube channel, it quickly became our bestseller. After extensive groundwork, we were able to work with Apas to 2022 switch to organic. This step strengthened demand and our partnership. Today we import several containers of Apas annually and work together more closely than ever before.
How Do We Roast Apas Coffee?
We roast Apas as a full charge (30kg) in our Giessen roaster. The roasting time is 15 minutes, with a development time after first crack of 2 minutes. The end temperature is 199° at the highest of our roasts, making Apas also our darkest roast.

All our coffees can be ordered in the form of a coffee letter. This reduces shipping costs for 250g of coffee from CHF 8.50 to CHF 2.50. It is treated like a regular letter and arrives in your mailbox.
