Gisi's background is in the natural sciences, and you can clearly feel that here. Her own measurements are incorporated into her analyses. Gisi puts frequently mentioned chlorogenic acids into context, explains the roasting process chemically and physically, and avoids the trap of oversimplification. A standard work that belongs in every coffee library.
