The Leica Espresso from Finca Santa Rita is crema magazine's test winner. What a surprise and joy! Being a test winner is already wonderful in itself. But with no other coffee could the joy be greater, especially since it comes from our own Farm Santa Rita and was roasted by our roastery. We have truly accompanied this coffee from cultivation to cup.
The Leica Espresso is a farm blend consisting of the Caturra and Catuaí varieties. We divided the farm into seven micro-lots. Each micro-lot is named after one of the previous owners. Leica was not an owner, but is the farm's dog, who had 11 puppies in spring. This blend is named after her and is, so to speak, dedicated to her.

Profile
The Leica Espresso is very balanced and has a wonderfully soft texture. It reminds one of dark chocolate, is slightly fruity (cherries), and has a long aftertaste.
Processing
Here we chose the processing method that is classic for the region: the cherries were hand-picked, sorted in the washing channel, and washed. Afterwards, we let them rest in the shade for 16 hours and overnight, a so-called "reposa". Light fermentation begins, but develops only slowly due to the cool night temperatures. This practice gives the coffee some fruit notes and more sweetness. The next day, the cherries were pulped and washed. Pre-dried at the beneficio, they were then taken to the dry mill in Ocotal and dried down to 12% there over 10 days with partial shade.
