Santa Rita Leica Espresso is crema magazine test winner

The Leica Espresso from Finca Santa Rita is a crema magazine test winner. What a surprise and joy! Being a test winner is wonderful in itself. But no other coffee could bring us greater joy, especially since it comes from our own Farm Santa Rita and was roasted by our roastery. We have truly accompanied this coffee from cultivation all the way to your cup.

The Leica Espresso is a farm blend made up of the Caturra and Catuaí varieties. We divided the farm into seven micro-lots. Each micro-lot is named after one of the previous owners. Leica wasn't an owner, but is the farm dog who had 11 puppies in spring. This blend is named after her and is dedicated to her, so to speak.

    Profile

The Leica Espresso is very well-balanced and has a wonderfully smooth texture. It reminds you of dark chocolate, is slightly fruity (cherries) and has a long finish.

    Processing

Here we chose the processing method that is classic for the region: the cherries were hand-picked, sorted in the washing channel and washed. Then we let them rest for 16 hours in the shade and overnight, a so-called «reposa». Light fermentation begins, but develops slowly due to the cool night temperatures. This practice gives the coffee some fruitiness and more sweetness. The next day the cherries were depulped and washed. Pre-dried at the beneficio, they were then taken to the dry mill in Ocotal where they were dried down to 12% over 10 days in partial shade.
