Our David developed and optimized the recipe with the following equipment:

Why does Gara Sole taste the way it does?

Coffees from the Bensa region have been gaining increasing attention in recent years. With this comes greater awareness and demand. These coffees generally have a stable acid structure because they are among the highest-altitude coffees grown in Ethiopia (up to 2,300 meters above sea level). The drying of the cherries is also somewhat prolonged due to the microclimate (brief rain occurring almost daily). In blind tastings over recent years, we've consistently found ourselves drawn to coffees from the Bensa region, as the growing conditions there harmonize fantastically with the natural post-harvest process.

Why did we purchase Gara Sole?

David from our team was on-site in November 2024 and visited Gara Sole with our new partners from Plotcoffee, as well as the exporter Testi Coffee. In summer 2024, we received a great selection of samples from Plotcoffee. We cupped them and both the Gara Sole and the Duwancho stood out. During his trip, David was able to better understand the region, make connections, and also secure lots for the next season. For the first time, we now have a constellation with Plotcoffee, Testi Coffee, and David that allows us to dive deeper into the Ethiopian coffee world and learn.

How do we roast this coffee?

We finish roasting the coffee in 8:30 minutes. With a development time of 45 seconds (8.6%) and a shorter roast, we emphasize what is inherent in the coffee: lots of fruit and delicate, floral aromas. Since the coffee requires a lot of energy, we provide 70% energy at the start for a short roast and finish roasting at 50%.

Shipping also possible via coffee letter

All our coffees can be ordered in the form of a coffee letter. It is treated like a regular letter and arrives in your mailbox. This reduces postage for 250g of coffee from 7 to 2.5 francs. At checkout, you can choose between coffee letter, A-Post, and B-Post options.
