The Flaneur is back. A soft, balanced, milk chocolate and floral coffee. Here we blend two washed coffees, one from Ethiopia and the other from Mexico. Light-footed and playful, the Flaneur.

Tell Me More About the Flaneur

The Flaneur brings together two of our concerns. First: organic coffee production. A challenge to produce this way, but the producers of the green coffees in this blend manage to do exactly that. Capitán is a young cooperative in Chiapas, Mexico. Shakisso is a farm in Ethiopia's Guji Zone. Second: taste experiences. The Flaneur stands for what is light, somewhat playful and yet complex. In the Flaneur we find this tension. Depending on the preparation method and drink, either the floral or the sweet raw sugar notes dominate.

Why does the coffee taste the way it does?

The development of coffee blends is a process. We've refined this blend over several years and are now where we wanted to be in terms of taste. First we define which coffees we blend and why. The strengths of each coffee should be clearly recognizable. However, the coffees need commonalities so we can roast them uniformly. The density, moisture and post-harvest process of the coffee beans are decisive for us and allow us to roast the coffee with more heat in less time. This way we emphasize the floral notes of the Ethiopian coffee.

How Do We Roast This Coffee?

We roast the coffee as a 20kg batch in our 30kg Giesen roaster. With a total roast time of 11:20 minutes and a development time of 1:50 minutes (or 16%), we've arrived at a light to medium espresso roast. We roast the coffee for balance between sweetness and acidity. We maintain the floral notes of the Ethiopian coffee and strengthen the panela-like notes of the Mexican coffee by developing it slightly longer.

All our coffees can be ordered in the form of a Coffee Letter. This reduces the shipping cost for 250g coffee from CHF 7 to CHF 2. It is treated like a regular letter and arrives in your mailbox.
