Tell me more about El Botón
Fully automatic coffee machines brew coffee differently than espresso machines. This raises the question of which coffee beans are suitable for a fully automatic machine. With our understanding of coffee, we seek beans that bring a lot of body and rich texture. Instead of roasting the coffee very dark, we extend the roasting process and have thus developed a roasting profile specifically for fully automatic coffee machines. The coffees come from our friend César Marin, from whom we have been sourcing coffees since 2023, and from Bharath Belliappa from India, whom Nadja visited for the first time in spring 2026. El Botón brings together all our demands for a coffee: customary transparent sourcing of green coffee, the respective conscious production of both producers, clear aromatics, and precise roasting.
Why does the coffee taste the way it does?
We decided on a blend to combine two attributes: lighter aromas (Peru) and a more classic finish (India). César's coffee from Peru brings a soft texture and slightly floral notes. Bharath's Robusta from India gives the coffee a strong character and emphasizes the finish.
How do we roast this coffee?
The coffee distribution in the brewing chamber and the lower brewing pressure in the fully automatic machine inspired us to use a different roasting approach. Unlike espresso for an espresso machine, where we gradually reduce the gas supply, we increase it again in the final quarter of the roast. This allows the coffee to reach a higher final temperature during a medium roasting duration, which gives it the caramel notes.
