How we prepare the coffee
The first roasts have left the coffee house. For our recipe, we like to let coffee off-gas for at least a week, so it's still too fresh at the moment. You'll find the recipe here in about 1-2 weeks.
Why does the coffee taste the way it does?
Suke Quto is located in the Odo Shakisso district at 1,800 to 2,000 meters, on volcanic soil. Harvesting takes place from November to January. Processed as a natural, the cherries dry whole and are only hulled afterwards, which brings dark fruit notes and plenty of sweetness to the cup. The beans come from Ethiopian landrace varieties, a blend of local varieties that are not individually identified. Swiss Water handled the decaffeination: in the Swiss Water Process, caffeine is removed from the green bean with water, without chemical solvents.
Why did we buy this coffee?
Tesfaye Bekele grew up in a coffee family and worked in the environmental sector of the Ethiopian government in the 1990s. After several devastating forest fires in Guji, he committed himself to reforestation and came back to coffee: he wanted to encourage farmers in the region to invest in coffee again. Because coffee only yields returns after many years, interest remained small. Bekele left his job and farmed his own plot. This led to the creation of the Suke Quto Farm and washing station, which today processes coffee from 171 farmers in the region. Swiss Water has been working with him for some time and purchased this coffee together with importer Trabocca.
How do we roast this coffee?
As a 25 kg batch, we roast this coffee through in just over 14 minutes. We do a 30-second soak, meaning we apply no heat at the beginning. This is how we roast our decaffeinated coffees because their cell structure is more porous due to the decaffeination process.
