Tell me more about El Botón
Fully automatic coffee machines brew coffee differently than espresso machines. This raises the question: which coffee bean is suitable for a fully automatic machine? With our understanding of coffee, we seek beans that bring plenty of body and rich texture. Rather than roasting the coffee very dark, we extend the roasting process and have developed a roast profile specifically for fully automatic coffee machines. The coffees come from our friend César Marín, from whom we have been sourcing coffee since 2023, and from Bharath Belliappa from India, whom Nadja visited for the first time in spring 2026. El Botón brings together all our demands for a coffee: consistently transparent sourcing of green coffee, the natural production methods of both producers, clear aromatics, and precise roasting.
Why does the coffee taste the way it does?
We chose a blend to combine two attributes: lighter aromas (Peru) and a more classic finish (India). César's coffee from Peru brings a soft texture and slightly floral notes. Bharath's Robusta from India gives the coffee a strong base character and emphasizes the finish.
How do we roast this coffee?
The coffee distribution in the brewing chamber and the lower brewing pressure in fully automatic machines inspired us to take a different approach to roasting. Unlike espresso for espresso machines, where we gradually reduce gas supply, we increase it again in the final quarter of the roast. This way, with a medium roasting duration, the coffee reaches a higher final temperature, giving it those caramel notes.
