Tu trouveras la recette ici dans environ 1 à 2 semaines.\u003c\/p\u003e\u003ch2\u003ePourquoi le café a-t-il ce goût ?\u003c\/h2\u003e\u003cp\u003eIl peut faire étonnamment froid dans la Sierra de Zongolica. Derrière Orizaba, les premières collines s'élèvent et montent toujours plus haut, jusqu'à atteindre les vallées accidentées de la Sierra. Les pentes sont raides et les nuages y restent visibles. Au soleil, les vallées se réchauffent en revanche. Cela rend la culture du café difficile, surtout pour les Naturals.\u003c\/p\u003e\u003cp\u003eLes cerises sont cueillies et fermentées dans des sacs en plastique avant de sécher sur des lits surélevés. Parce qu'il fait souvent froid, le séchage prend très longtemps. Et parce qu'il est souvent humide, le risque de moisissure augmente. Un soin particulier est donc nécessaire ici.\u003c\/p\u003e\u003cp\u003eLe goût le reflète tout : l'acidité fraîche et juteuse provient des conditions de culture, car les températures froides font que les cerises mûrissent longtemps. La fermentation de 90 heures souligne un caractère fruité frais avec un accent sur les fruits rouges, sans surcharger l'acidité. La texture soyeuse et élégante provient de la récolte soignée et du tri manuel des cerises.\u003c\/p\u003e\u003ch2\u003ePourquoi avons-nous acheté ce café ?\u003c\/h2\u003e\u003cp\u003eDepuis 2022, nous travaillons avec Ensambles et les productrices de Citlal Kafen pour améliorer la qualité du café et renforcer la coopérative. Le Toca est le mélange coopératif lavé. L'objectif a toujours été aussi de produire des microlots.\u003c\/p\u003e\u003cp\u003ePour cela, des lots individuels composés de cerises de café particulièrement de haute qualité sont séparés, fermentés et séchés dans la cerise en Natural. C'est un nouveau processus, non seulement pour la coopérative, mais pour toute la région.\u003c\/p\u003e\u003cp\u003ePour les projets à long terme qui doivent créer un changement notable sur place, il est important qu'en résultent des cafés qui jouent sensoriquement dans la cour des grands. Celui-ci est le premier lot que la jeune coopérative a traité de cette façon.
