In the cool climate, the coffee grows more slowly and develops the citric acidity characteristic of the Marcala region. After picking, the cherries are immediately depulped, dry-fermented in fermentation tanks, and washed after just under 20 hours. The fermentation process dissolves the pectin layer surrounding the coffee seeds. The coffee from Nicaragua from the farms Las Nubes and El Recuerdo – neighboring farms and partners of ours in Nicaragua – adds complexity to the blend. With sweet and sour notes, it balances out the blend. So we roast the coffee up to just before the first crack at 70% energy, which is a lot. We roast it for a total of 13:30 minutes to the same final temperature as our APAS. The coffee was grown about 20 km away in Neria, processed at Rancho San Felipe, also in Córdoba. It was later shipped from the port of Veracruz, which is just under 100 km away. While it all sounds logical, it actually isn't. There are only two companies that specialize in water decaffeination: Descamex in Mexico and Swiss Water in Canada. Our Sueño is decaffeinated in Mexico using the chemical-free Mountain Water Decaf process. The process works solely with water, pressure, and time. We were able to visit the plant at the end of 2022 and taste the coffees before and after the decaffeination process. The flavor of a decaf is determined by the bean used, the process, and the roast. The coffee itself provides a heavy body and chocolate notes, which the process does not alter. The acidity remains citric, complemented by a hint of maple syrup that has become characteristic for us. We developed a suitable roasting profile for this.\u003c\/p\u003e\n\u003ch2\u003eHow did we roast the Sueño?\u003c\/h2\u003e\n\u003cp\u003eThe beans are sorted with extreme precision. While roasting, we notice how dense the beans are - they crack louder than other decaffeinated coffees we have roasted so far. In the first two minutes, we only apply 20% energy to the roast, performing a so-called \u003cem\u003esoak\u003c\/em\u003e. The cell structure of the coffee is opened up by the decaffeination process, so we start the roast with less energy. After that, we increase the energy and let it drop almost to zero at the end of the roast.
