This raises the question: which coffee bean is suitable for a fully automatic machine? With our understanding of coffee, we seek beans that bring plenty of body and rich texture. Rather than roasting the coffee very dark, we extend the roasting process and have developed a roast profile specifically for fully automatic coffee machines. The coffees come from our friend César Marín, from whom we have been sourcing coffee since 2023, and from Bharath Belliappa from India, whom Nadja visited for the first time in spring 2026. Die Topographie ist beeindruckend, und ebenso die Geschichte. Espírito Santo hat eine Geschichte, die stark von der Immigration geprägt ist. Viele italienische Familien sind Ende des 19. Jahrhunderts eingewandert, haben in der Kaffeeproduktion gearbeitet und nach und nach Kaffeefarmen übernommen.\u003c\/p\u003e\n\u003cp\u003eDie zwei Familien, die ihren Kaffee für den Compadre beisteuern, haben ebenfalls italienische Wurzeln: Die Romãos produzieren ihren \u003cem\u003epulped natural\u003c\/em\u003e Arabica in der bergigen Region um Castelo, während die Magieros in den Ebenen von São Mateus im Norden von Espírito Santo ihren \u003cem\u003epulped natural\u003c\/em\u003e Conilon herstellen. Wenn man so möchte, schliesst sich ein sehr grosser, historischer Kreis: Der Kaffee der beiden Familien mit italienischen Wurzeln landet nun in einem Espresso nach italienischem Vorbild.\u003c\/p\u003e\n\u003ch2\u003eWie rösten wir diesen Kaffee?\u003c\/h2\u003e\n\u003cp\u003eWir haben uns für eine mittellange und heisse Röstung entschieden. Den Henrique- oder Apas-Espresso rösten wir etwas länger, jedoch haben wir beim Compadre die höchste Endtemperatur auf unserem Röster. Mit dieser hohen Endtemperatur betonen wir die röstigeren, kräftigen Noten.
